We are referring to the oxtail which, when prepared in stew, certainly makes us doubt if this is not one of the best meat dishes that you can get to taste in life. At least that is my case.
Back then, when the bullfight in the «Plaza de la Corredera» was over. The «chindas» or «tripalleras» (as they called the daughters or widows of the old bullfighters) sold the tails of the bulls on tables painted green, to separate them from other offal (giblets) and the rest of the bullfighting lean meat.
The tail, as we all know, is the part that corresponds to the tail of the animal and is separated at the level of the second and third coccygeal vertebrae. Because of its tenderness within the bovine carcass, it is included among the less valuable cuts, which ironically are the ones that provide the most flavor.
Tails are generally cut into vertebrae sections, which are (according to the age and size of the animal) between 3 and 4 centimeters long. The vertebrae of the tips have little meat and are not an ingredient of interest for the dish; therefore, it is advisable to ask the butcher not to include them when purchasing this cut.
