El verano pasado hice mi primer salmorejo cordobés gracias a la estupenda explicación que encontré en la web de Javirecetas. Me encantó ese sencillo pero delicioso plato que en adelante aplacó el calor, la sed y el hambre. Esta temporada, en cuanto apenas se notó el calor, fui a comprar unos buenos tomates rojos para preparar el primer Salmorejo del verano. Ahora, los tomates pera y los tomates rama están en su mejor momento.

Los tomates rama son mis favoritos para preparar el Salmorejo. Los tomates de pera los dejo para nuestros desayunos andaluces que hacemos todos los fines de semana, sean de verano o de invierno, sea la estación que sea. El salmorejo cordobés es un plato muy humilde. Se preparaba antes de que Cristóbal Colón trajera los tomates del Nuevo Mundo. Por eso, antes de eso, el salmorejo se hacía sólo con vinagre, pan, aceite y ajo, todo perfectamente machacado en un mortero. Nunca estuvo en un libro de cocina de la corte. Lo preparaba y lo comía la gente pobre y la gente del campo.

El salmorejo es un plato típico de Córdoba. Lo probamos por primera vez cuando estuvimos en Córdoba con un grupo de amigos de Madrid. Al probarlo todos dijimos lo mismo: “Es como el gazpacho pero más espeso”. En realidad, esto no le hace justicia ya que es mucho mejor que el gazpacho en mi opinión y a mucha gente que no le gusta el gazpacho sí le gusta este plato. Es más un dip que una sopa y en Córdoba se suele comer mojando pan o palitos de pan seco en él. También se puede utilizar una cuchara.

Los siguientes son los ingredientes a grandes rasgos, pero puedes experimentar un poco, ya que puede que te guste el salmorejo espeso como a mí o que lo prefieras un poco más fino. Si lo prefieres más fino deberás añadir menos pan o quizás un poco de agua. Hay que tener mucho cuidado con la cantidad de ajo que se utiliza ya que puede ser un poco fuerte.

Lo primero que hay que hacer es quitarle la corteza al pan. Yo utilizo un pan de molde español, pero si no se puede conseguir algo así, se puede utilizar pan de molde duro. No estoy seguro de la cantidad que necesitarás (cuanto más duro sea el pan, menos necesitarás). Si utilizas un pan de molde, quitarle la corteza puede ser bastante complicado. Puedes usar un pelador o cortar el pan en rebanadas gruesas y luego cortar la corteza con un cuchillo grande y grueso.
